Media Advisory: UCSF Hosts Chef Corey Lee in Science of Cooking Program

WHAT: UCSF will host a program today titled, "Science & Cooking," featuring a discussion and demonstration of the increasingly parallel technologies behind modern cooking and bioscience. The Chauncey D. Leake Lecture will include guest speakers David Weitz, PhD, a physics professor at Harvard University, and James Beard Award winner Corey Lee, chef and owner of Benu restaurant. The lecture will include demonstrations of typical and unusual emulsions and gels used in laboratories and kitchens, and will be open to questions from the audience at the end.

Media are invited to attend the lecture. Prior B-roll of bioscience laboratories can be arranged.

WHO: David A. Weitz is the Mallinckrodt Professor of Physics and of Applied Physics at Harvard University. A specialist in the physics of soft matter, Weitz teaches the popular Harvard course, “Science and Cooking: From Haute Cuisine to the Science of Soft Matter,” which uses cooking to explain principles in applied physics and engineering.

Corey Lee is an award-winning San Francisco chef who is renowned for top-quality cuisine. Before opening Benu, which the New York Times rates as among "10 Restaurants Worth a Plane Ride," Corey was chef de cuisine at The French Laundry, named "Best Restaurant in North America" by Restaurant Magazine during his tenure. Lee is known for his creation of faux shark-fin soup, a specialty with low environmental impact.

WHY: The 2012 Chauncey D. Leake Lecture is organized by the UCSF Center for Systems & Synthetic Biology, which is working with Corey Lee to understand how the creativity and core technologies behind modern bioscience and haute cuisine can inform and inspire further creative approaches in each other. The annual Leake lecture series is sponsored by the UCSF departments of Cellular & Molecular Pharmacology and Anesthesia.
